Coconut Macaroons Eggless and Flourless

Coconut Macaroon...A delicious sweet treat for coconut Lovers!!!
Macaroons are dense, chewy, and very soft, American cookie that also has egg whites along with coconut flakes and some amount of flour(commonly used is Almond flour).
This recipe of Macaroons/Cookies is Eggfree, Vegan, Dairyfree & Gluten free as it uses coconut milk(Homemade) instead of egg-whites, just fine Coconut shreds(leftover after making homemade coconut milk) and Sugar. Though these were quite soft and tender, had a superb taste.
One can also use dessicated coconut instead of leftover coconut shreds to reduce the baking time to 20 mins.
This is a must try recipe for those who want an eggless recipe for Macaroons!

Steps

Preheat the oven to 180° C. Grease the baking tray with coconut oil.

Blend coconut milk, coconut oil & sugar to get the smooth mixture. Now combine it to fine coconut shreds or dessicated coconut. Mix it really well. Freeze it for 10 mins to remove excess water.

It should be of a thick dropping consistency. Apply some oil & Scoop out the cookie mixture Or with hand roll out the small balls.

Bake for 45 mins(25 mins if using dessicated coconut) in a preheated oven till golden brown from outside the macaroons will be soft and tender from inside.

Store in the airtight container for a week. Enjoy!
