Perfect with dark and bitter greens, thinly sliced radish, grated carrots, finely chopped fresh green beans, diced tomatoes, green onions, and blueberries. Chicken and chickpeas both work well with this salad if you prefer to make it a meal.

Add your EVOO, white wine vinegar, dijon, and honey into a glass jar with a tight-fitting lid.

Mince your garlic as finely as possible, and add to jar.

Zest your lemon and add. Add salt and pepper to your taste - don't skip the salt! It's important to brighten the flavours of your vegetables.

Seal the jar tightly with the lid, and vigorously shake it for a few seconds until its emulsified. Taste, make adjustments to suit your taste.
