First arbi is needed to be washed nicely. Wash properly in running water till all the dirt is removed.

Take a pressure cooker add arabians 2 cups water or as needed for boiling. Cook till 1st whistle. Switch off the heat, immediately as soon as after 1 st whistle.

Let the steam come out naturally, then open the cooker.Drain the water.Take out arbi and as it little cools down remove skin of it and chop it to medium round shape.

Take a kadhai, add oil,let it heat well,then add cumin seeds,as it splutters, add asafoetida. Then add ginger and chili paste, dry whole chilli, all masalas turmeric powder, red chili powder,coriander powder, garam masala, amchur masala and salt to taste. Mix it all well.

Then add chopped arbi.Mix it in medium heat for 2 minutes. Then cover it and keep it on low heat for 4 to 5 minutes.

Once done switch off the heat. Also adjust salt and other spices according to taste.

Garnish with fresh coriander leaves
