Potato and Zucchini Casserole

How do you manage to do everything?
Dear Meggy,
Another weekend has flown by and today we start again.
For many, school is starting up, but we’re still in limbo.
But today, something is starting again for us too. The interviews your mom does, which until now you’ve only heard from inside my belly. I like the idea that they began with you.
Sure, the days will be hectic until everything really gets going, but we’ll organize and handle it all, together.
If there’s one thing life has taught me, it’s patience.
We’ll do everything, but at the right pace, giving each thing its proper importance.
Finding the right balance will be the secret to moving forward.
Of course, with your dad’s support, everything would be easier and better.
Maybe we would have settled for grandma’s help, if she hadn’t fallen and broken her shoulder—she’d already be here cuddling you and your siblings and helping me out.
And scolding me, because she makes this casserole with eggplant, and I use zucchini.
But it’s delicious.
When you’re older, we’ll laugh about it, and enjoy it together too.

Beat the eggs. Cook the potatoes in the microwave or in a pot, then mash them and let them cool.

Wash and trim the zucchini, grate them into thin strips, and pat them dry to remove excess moisture.

Add all the ingredients to the beaten eggs, mix until you have a smooth mixture, and pour half of it into a 9-inch loaf pan lined with parchment paper.

Add the smoked mozzarella in long strips, then cover with the remaining mixture.

Sprinkle with breadcrumbs and Parmesan cheese, and bake in a preheated oven at 400°F (200°C) for about 40 minutes.

Let cool slightly before removing from the pan and serve warm.
