Zucchini Soup with Tomato and Basil

Ingredients

  1. 2trombetta zucchinis
  2. 4 1/4 cupswater (1 liter)
  3. Salt to taste
  4. 1/2white onion
  5. Extra virgin olive oil to taste
  6. 2beefsteak tomatoes
  7. 6basil leaves

Cooking Instructions

    Place the chopped zucchinis and onion in a pot, add salt, and cook until done.

    Once cooked, blend everything and let the soup thicken.

    Peel the tomatoes, remove the seeds, and cut them into small cubes. Season with extra virgin olive oil, salt, and thinly sliced basil.
