Fried Spring Rolls

This is almost a traditional dish in our family for special occasions. The soft, sweet, and nutty flavors of the ingredients mixed together with the crispy spring roll wrapper, the spicy taste of pepper, and the fragrant cilantro... it's been familiar to me since I was a little kid. My spring rolls aren't as delicious as my mom's, but strangely, my two kids like them just as much as their mom liked their grandma's spring rolls back in the day.

Soak the wood ear mushrooms in hot water until they expand, then wash them thoroughly. Soak the shiitake mushrooms in cold water for 15 minutes until soft, then wash and drain. Soak the vermicelli noodles in warm water for 15 minutes until soft, then drain and cut into short strands.

Wash the carrot and onion, then shred them finely and chop them into small pieces for easier cooking.

Slice the wood ear and shiitake mushrooms into thin strips, then chop finely. Wash the green onion and cilantro, then chop into small pieces.

Clean the pork and mince or grind it finely.

Place all the ingredients in a large bowl, add 3 eggs, 3 teaspoons of seasoning powder, and a pinch of ground pepper for aroma. Use plastic gloves to mix all the ingredients thoroughly.

Wrap the spring rolls evenly and tightly.

Heat a pan of oil on the stove until hot, squeeze a few drops of lemon juice into the pan, then gently place the spring rolls in to fry. (On the day I fried these, we were running low on oil, so as you can see in the picture, it was a bit difficult to fry with so little oil). Remember to turn them regularly so they turn golden brown without burning.
