Steps

First of all chop onion, potatoes, capsicum, and coriander leaves & keep it ready,

Take sauce pan add 2-3 tbsp oil, add chopped/sliced potatoes, saute for two minutes, add chopped onions add pinch of salt and saute for one more minute,

Now close the lid and let it cook for 5 minutes on low flame

Take 4 eggs in a mixing bowl, add salt and pepper powder, whisk well

Turn off the flame take out fried potato, onion mixture, cool it for a minute,add this to whisked eggs, mix well

Take 1tsp butter in a saucepan, add omelette mixture spread evenly, close the lid, cook for two minutes on low flame, with the help of a plate flip omelette in to plate, slowly put back omelette in to same pan to cook it on other side,cook for two more minute on low flame, make sure omelette cooked perfectly,that's all your fluffy, yummy Spanish omelette is done..!!
