Steps

Wash the rice 2-3 times and soak them for 20 minutes

Heat a Pot.add oil

As oil turns a little warm add all the whole spices.

Spices turn aromatic.add sugar stir and cook continuously till the sugar caramelizes(turns Golden brown), now add water (4-5 tbsp)and stir so as to lower down the temperature and stop the sugar caramel from burning (if it burns.then rice will taste bitter)

Now add all the water needed to cook the rice. As water boils add salt as per taste and Washed and Soaked rice.

Meanwhile rice is cooking.in another pan heat 1tbsp oil and shallow fry the raisins and splited cashews till golden.

Now rice is done.add fried dry fruitsCook for a minute or two and switch off the flame.

Serve this Delicious Caramel Rice With Dal.
