In a large saute pan, heat the leftover taco meat.

Add stewed tomatoes to leftover taco meat. Break up the tomatoes and let it all simmer until heated.

Add leftover white rice.

Add a chopped bell pepper.

Transfer to a casserole dish and top with taco cheese.
