Carrot pickle/ gajar ka aachar

Keep all ingredients ready. Peel the carrot and finely chop 2 medium sized carrot. And also ginger finely chopped.

Take a bowl add carrot, ginger and Kalonji seeds.

Add rai na kuria/ split mustard seeds.

Add turmeric powder.

Add red chilli powder.

Add salt.

Add hing.
- 8
Mix well. Heat oil in pan. Once it's medium hot. Pour on the pickle. Mix well. Give some resting time. Instant carrot pickle is ready to serve. You can always adjust the ingredients as per your taste. Add lime juice at the end and it's optional.
