Bharla vanga(bharva baingan, stuffed bringal)
Steps
- 1
Give two cuts to bringals.keep in water as it turns black.
- 2
In big bowl take grated coconut, Ginger garlic paste, red chilli powder, Jaggery, goda masala.(Maharashtrian traditional masala) tamarind pulp and onions.you can add roasted peanut powder also I skipped that as coconut and peanuts both are heavy. take out 2tsoopns onion for tadaka.mix well
- 3
Stuff masala in bringals.it should be in enough quantity.now heat kadai add oil to it.add chopped onion once it is hot saute. Now put bringals slowly in kadai.
- 4
Don't add water at this stage.cook bringals for 5mins as masala holds it properly.now mix well and slowly add water by sides. Cook for more 15 minutes.serve hot with rice flour roti or chapati.
- 5
Traditionally peanuts and coconut mixture is used in recipe but I use only one of them you can take both in equal quantity.tamarind pulp can be replaced by lemon juice or dry mango powder.tastes yum.
