Feni/Gaja is part of the 'chhapan bhog' offered to Lord Jagannath in the famous Puri temple situated in my native state Odisha. This is a very popular layered sweet, crispy and tasty, loved by both young and old. It can be stored for many days.

Feni/Gaja is part of the 'chhapan bhog' offered to Lord Jagannath in the famous Puri temple situated in my native state Odisha. This is a very popular layered sweet, crispy and tasty, loved by both young and old. It can be stored for many days.

In a bowl take maida, 2 tbsp ghee and a pinch of salt.

Rub these ingredients like bread crumbs. Add little water at a time.

Make a medium dough, not so hard or too soft. Rest the dough for 15 minutes.

Heat 3/4 cup of water and 1cup of sugar. Bring to boil.

Add lime juice to check, formation of crystals of sugar.

Boil the sugar syrup on medium flame to get thickness, less than one string. Otherwise feni will be more sweeter.

Add the cardamom power. Allow the syrup to cool down.

Make a paste of 1 tsp rice flour and 1 tbsp ghee.

Make 6 balls from the dough. Make thin roti with roll pin. Spread the rice powder paste on first roti.

Keep the second roti on first one and again spread rice flour paste.

Cut the roll into eight piece. Roll them in light hand.

Heat oil in a wok. Then fry the rolled out feni on low heat to make crispy.

Fry till golden brown on low flame. Keep on kitchen towels.

Slightly warm the sugar syrup and put down the fried feni and immediately bring out, to keep feni lightly sweet.

Serve when cool down. Keep in an airtight container,for further use.
