Puri, Aloo Posto, and Halwa

Today I made a Bengali breakfast: puri, aloo posto, and halwa. My mother-in-law is Bengali, so Bengali food is often made at home. I recently visited my in-laws and learned this Bengali aloo posto from my mother-in-law. It turned out very tasty.

To make aloo posto: First, soak 1 tablespoon poppy seeds in water. This helps them blend easily. Chop the small onion and grind it together with the soaked poppy seeds to make a paste.

Heat mustard oil in a pan. Add panch phoron and bay leaves. Add the ginger-garlic paste and sauté. After 2-3 minutes, add the poppy seed-onion paste and sauté. Add ground coriander, red chili powder, turmeric powder, and salt, and cook the spices.

Once the spices are well cooked, cut the boiled potatoes into small pieces and add them. Sauté for 3-4 minutes. Add water as needed. Cover and cook for 10 minutes. Add garam masala. Once it comes to a good boil, turn off the heat. Aloo posto is ready.

To make puri: Mix the whole wheat flour, semolina, salt, and a little vegetable oil. Knead into a stiff dough. Let it rest for 10-15 minutes. Roll into small discs and fry until golden.

To make halwa: Heat 2 tablespoons ghee in a pan and add the semolina. Stir continuously and roast for 3-4 minutes. Add some chopped nuts and cardamom powder. Add water as needed. Add sugar. Stir continuously until it thickens, then turn off the heat.

Now your halwa, puri, and aloo posto are ready. Serve hot.
