Steps

Cut the potatoes in halves.In a kadhai, add ghee and a lil bit of salt to it. Add the potatoes in batches. Fry them on medium flame, till they change colour. Keep them aside.

Now, make a fine paste of ginger, green chillies and kaju.

Now, to the leftover ghee, add,jeera.

To this add the cashew paste and let it thicken up a bit.

Now, all the spices, cook at medium to low heat till the masala leaves oil.

Add in the potatoes, coat them with masala, cover and cook for 3 mins.

Add, water,cover and cook for 5-6 mins.

In the end add elaichi powder, Cover and simmer for 4-5 mins more. Switch off the gas, squeeze in the lemon. Mix and its done.

Garnish it with roasted cashew and green chillies.Serve it hot with your favourite vrat dish I served it with buckwheat flour pooris.Enjoy!
