Thinly slice the shallots. Fry until golden and fragrant. Slice the sausage and cucumbers as you like.

Finely chop the wood ear mushrooms and sauté with the ground pork. Season to taste.

Mix the bánh cuốn flour with tapioca starch and water according to the package instructions. Add a little cooking oil and stir well. Lightly oil a pan, pour in a ladle of batter, cover, and cook for 30 seconds until set. Transfer to a plate and roll with the pork and mushroom filling.
