Ingredients

Serves 4 servings
  • 1 packagebánh cuốn flour mix
  • 2 teaspoonstapioca starch (about 5 grams)
  • 10 1/2 ouncesground pork (about 300 grams)
  • 7 ounceswood ear mushrooms (about 200 grams)
  • 3cucumbers
  • 3 1/2 ouncesshallots (about 100 grams)
  • 14 ouncesVietnamese cinnamon pork sausage (chả quế, about 400 grams)
  • 12 1/3 ouncesVietnamese pork sausage (chả lụa, about 350 grams)
  • water, good quality fish sauce, seasonings

Steps

    Thinly slice the shallots. Fry until golden and fragrant. Slice the sausage and cucumbers as you like.

    Finely chop the wood ear mushrooms and sauté with the ground pork. Season to taste.

    Mix the bánh cuốn flour with tapioca starch and water according to the package instructions. Add a little cooking oil and stir well. Lightly oil a pan, pour in a ladle of batter, cover, and cook for 30 seconds until set. Transfer to a plate and roll with the pork and mushroom filling.
