Wash lentils in a strainer

Soak rice is cold water.
- 3
Finely dice onion and set aside.

In a medium pot, caramelize diced onion with 1 tbs of oil over medium to high heat for 5 minutes.

Add lentils to pot and add 5 cups of water, then bring to a boil. Cover and let it simmer for 30 minutes.

Add the rice, salt, pepper and cinnamon. Stir to combine. Bring to a boil then simmer for 15 minutes (until water is absorbed)

Serve with cucumber yogurt salad, or caramelized onion wings.
