Ghughara or karanji or ghujiya is a sweet dish made with maida flour and stuffed with khoya or dryfruits or semolina and other ingredients. It is usually made during Diwali Festivals.

Make rough powder of mixed dryfruits

Dry roast maida till it becomes light pink in colour.when it cools down,add 3 tbsp of ghee and prepare dough for ghughra. It should be like puri aata dough.Rest it for 10 minutes.

Heat 2 tbsp ghee in a pan and roast semolina or fine rava for about 5 to 6 minutes or until it becomes light pink in colour.Add prepared dryfruits into semolina when it's hot.mix well.When it cool then add sugar and mix well.,keep aside

Knead dough and make equal size of balls,make small Puri out of it. Stuff with dryfruit stuffing and gave half moon shape and seal the edges with hand design called ' Kangri,on the edges of puri.Prepare all ghughara like this.Cover them with wet cloth,just to avoid dryness.

Heat ghee in a pan and fry all ghughra on low medium flame until they becomes golden in colour.let them cool and then store them in airtight containers.
