Cut eggplant into thick round pieces. Marinate it with some turmeric powder, red chilli powder & salt. Keep it aside

Make paste of onion, ginger & garlic with little water.. Make separate paste of tomato. Make separate paste of coriander leaves with stems & green chilies & little water.

Heat very little oil in a pan, add the onion ginger garlic paste, fry it for 3-4 mins. Next add the tomato paste, add salt & sugar and fry it for next 5-6 mins.

Add the coriander leaves paste, fry it for 2 mins, add curd and contiously stir it on a medium flame for about 5-6 minutes or until the moisture evaporates completely. Keep this mixture aside.

Heat another pan, add around 4tblsp of oil, add the brinjal pieces, fry it for 4-5 mins from one side, gently flip it put a thick layer of the prepared coriander masala, cook it for another 4-5 mins and it's done.
