Making your own paste is so much tastier than buying it From the shop. You can fry it off in a pan and add some coconut milk, fish sauce, lime leaves and palm sugar for a yummy Thai green curry and the paste freezes well too.

Ingredients

10 minutes
  1. 1 sticklemon grass
  2. 2 clovesgarlic
  3. 2small chillis (less if you aren’t a fan of the heat)
  4. Large handful of Coriander (including stalks)
  5. 2.5cms ginger
  6. 2shallots
  7. Zest and juice of a lime

Cooking Instructions

10 minutes
  1. 1

    Put all of the ingredients in a blender and blitz until smooth. Add a little water to loosen the mixture if needed.
