Heat oil in a pan.Add chopped onion.Toss and add chopped beans and carrot.Capsicum or other vegetables of choice leftover in fridge may be added also.Sprinkle little salt and cook few minutes.

Break an egg.Add pinch of salt and black pepper and whisk it till light and frothy.Pour on one side of the frying vegetables.Allow the egg to set,then scramble it and mix well.Add 2 chopped green chillies and toss.Pour in a serving plate and sprinkle grated cheese over it.Serve hot healthy Scrambled Egg with nutritious vegetables and topped with grated cheese alongwith toasted bread in breakfast or a quick and easy dinner.
