Peri Peri Sweet Potato Fries

Steps

Wash and start peeling sweet potatoes.

Slice them into 1cm and further cut them into 1cm batons. Immediately put them into iced cold water. Wash them thoroughly until Water turns milky. Furthermore take more iced cold water and soak sweet potatoes into it for 15-30 minutes. Than drain sweet potatoes to remove excess moisture.

Keep water for boiling, add salt to it. Blanch the cutted sweet potatoes in to boiling water for 3 to 5 minutes.

Cool the Blanched sweet potatoes and deep freeze it for minimum 30 minutes.

Now fry the sweet potatoes on low flame for 4 to 5 minutes. Than rest this half cooked fries for 10 minutes. Than place them on butter paper or directly on plate and not on tissue paper or kitchen towel.

After 10 minutes second fry on medium flame until it turns crispy and golded brown.

Sprinkle some salt and peri peri over fried sweet potatoes and it a toss. Can be served with tomato ketchup or dip of your choice.
