A family recipe through generations! This cake never fails. For those of you who don’t know, coffee cake has no coffee in it, it was named this because it was good to eat with coffee. It’s like a butter cake with cinnamon and sugar. Kinda like a snickerdoodle cake!

Ingredients

  1. 1stick- margarine
  2. 1cup- sour cream
  3. 1tsp- baking soda
  4. 1/2tsp- salt
  5. 2- eggs
  6. 1cup- sugar
  7. 2cups- flour
  8. 1tsp- baking powder
  9. 1tsp- pure vanilla extract
  10. Topping:
  11. 1/2 cupwalnuts (finely chopped)
  12. cinnamon/sugar mixture

Cooking Instructions

    Preheat oven to 325°

    Cream together sugar and margarine. Add sour cream, mix well until combined.

    Sift dry ingredients together, then add to sugar mixture.

    Add eggs one at a time, and beat well.

    Add vanilla.

    Spray either a bundt or loaf pan with nonstick cooking spray. I just use a loaf pan.

    My recipe says pour half the batter in and then the topping. Then pour the rest of the batter and put the topping on. But I like to have one extra layer of the topping mixture so continue reading the steps for how I do it.

    Pour some of the batter in, and then sprinkle your nut/cinnamon/sugar mixture on top. (I use a lot cuz I looove cinnamon. I don’t like nuts so I omit those.)

    Repeat and put some more batter in, and put the topping mixture on.

    Pour the rest of the batter in, and finish with the topping. (So it should be as follows: 1-batter, topping, 2- batter, topping, 3- batter, topping, done.)

    Bake for 40-50 minutes depending on your oven. Toothpick will come out clean.
