Turkey Meatballs with Sauce and Spaghetti

Heat oil in saucepan over medium heat. Add onion and sauté for 3 minutes. Add bell pepper and sauté until onion and pepper are soft, about 5 mins. Add garlic and cook for another minute.

Add the tomatoes, salt, oregano, garlic powder, onion salt, ground cumin and chilli flakes. Stir and cook for 2 mins.

Add chopped tomatoes, vegetable stock pot and 150ml cold water. (You can fill the tomato can about 1/2 to 2/3 up so you can clean out the juices.) Give a stir and turn heat to high. Once it is boiling, lower heat and let simmer uncovered until ready to serve.

Next make the meatballs. Put Parmesan, breadcrumbs, mixed herbs, oregano, salt, garlic powder, onion salt, black pepper and chilli flakes in a bowl and mix.

Heat oil in frying pan over medium high heat. Mix turkey in with the breadcrumb mixture. Divide into 15 equal size balls and place in pan. Cover and cook until brown all through, turning them over every now and then.

Whilst meatballs are cooking, boil a saucepan of water with the salt. Add spaghetti and boil uncovered for 9 mins or how long packaging states.

Serve with grated Parmesan and shredded iceberg lettuce
