Wash brinjal and potato and than cut in small pieces

Heat oil, add jeera, onions, green chillies, ginger and garlic granules. Saute well.

. Add the potatoes. Cook on high flame. Keep stirring at intervals.

Now add all the dry spices, salt. Mix well. Add the baigan. Cover and cook on slow flame without water. Just with the steam let it cook.. When done, serve in a serving bowl, garnish with coriander leaves.

Ready to serve with hot Roti😋
