Steps

Wash, extract the florets from the Mocha or Banana Flower, grease your palm and take out the pistil and calyx. This is a time-consuming but most important part of the Mocha. Set aside the florets.

Wash the florets and in a heavy-bottomed bowl heat water and boil the florets adding a pinch of turmeric powder and salt. Strain the water and mash the florets. Set aside

In a bowl add the yogurt and to it add turmeric powder, red chilli powder, roasted cumin powder. Mix well. Add the mashed Florets and mix well. Set aside.

In a pan heat little oil and fry the bori’s or lentil dumplings. Set aside and grind them.

In the same pan heat ghee and add the mashed Mocha mix. Fry and add little water if need be. The consistency should be dry. Add chopped green chilies and salt and fry a little. Set aside

In the same pan heat little ghee and add asafoetida. Add the whole cooked Mocha and garnish with grinded bori’s. Set aside.

Plate and enjoy with steamed rice
