Namkeen Rice

Wash the rice you have taken under cold running water to remove the impurities.

Soak the rice for 15 minutes and drain.

In the meantime get vegetable pepped and set aside.

In thick bottomed cooking vessel heat up oil.

Add whole spices such as cloves,bay leaves, cardamom,cumin and black peppercorns.

Cooked for 2 minutes, then add sliced onion, garlic and salt.

Then add the powered spices and cook on a slow flame until the flavour become apparent.

Now add the rice and stir fry until crispy.

Add water(preferably hot water) and bring to boil.

Add in diced potatoes and green peas.

Reduce the flame to simmer, cover with a lid.

Let it cook on simmer until soft and fragrant.

Sprinkle coriander leaves and ghee and gently mix in.

Serve hot and enjoy with yogurt or pickle.
