Dorayaki Cream-Filled

Cream-filled dorayaki is the staple omiyage of a certain town in Miyagi Prefecture. I always sent them as gifts, but I wanted to eat it as well.

Of course you can make these using a frying pan. Since these use heavy cream be sure to refrigerate them. Dairy-based heavy cream tends to get a little heavy so I recommend organic heavy cream. The amount of water included in the can of adzuki beans will differ depending on the manufacturer. Either use drained or tsubu-an (chunky anko). Recipe by Pekuchin

Ingredients

6 servings
  1. 200 gramsHomemade Pancake Mix
  2. 1 tbspHoney
  3. 1 tbspVegetable oil
  4. 1Egg
  5. 150 mlMilk
  6. 100 mlHeavy cream
  7. 1 canBoiled adzuki beans, canned

Steps

    Add the honey, vegetable oil, and eggs into a bowl and mix well with a whisk.

  2. 2

    Add milk and mix well. Then add the Homemade Pancake Mix and mix. Don't knead the mixture.

  3. 3

    Heat an electric griddle to 140℃. Use a ladle to spread the mixture over the griddle. Once the top layer starts to bubble turn over and lightly cook.

  4. 4

    Once it's cooked, set it on top of a kitchen towel. Be sure not to let them overlap with each other. Place a tightly wrung towel on top to allow it to become moist.

  5. 5

    Put the heavy cream into a bowl and whip until foamy. Add the adzuki and mix with a rubber spatula.

  6. 6

    Cool the adzuki cream mixture from Step 5, then place in between the pancakes you made in Step 4 and it's complete.
