Whole wheat jaggery cake is guilt free, healthy cake recipe made from whole wheat flour, jaggery, ghee, nuts and flavoured with vanilla essence. It tastes delicious, very easy to make and can be enjoyed anytime without any guilt.

Preparation: Grease a cake tin with ghee. Preheat oven to 180 degrees for 10 mins. Sieve powdered jaggery to remove lumps.

In a bowl sieve wheat flour, baking powder, baking soda and salt. Set aside.

In a mixing bowl take powdered jaggery, curd and melted ghee. Mix well with a whisk until jaggery is melted.

Add vanilla essence and mix.

Add the dry mix in two portions and mix until combined.

Add milk in two portions and combine well scraping the sides.

Once the batter is combined well add chopped nuts and mix in.

Transfer the mixture into greased baking tin. Gently tap to remove air bubbles and decorate with nuts on the top.

Bake in preheated oven at 180 degree for 20 minutes or until toothpick inserted in the center comes out clean. Let it cool completely. Loosen the sides and invert the cake onto a plate
