Peanut Butter and Chocolate Chip Cookies

I made these as part of my Christmas cookie assortment. Since they were to be arranged in a display, I made them in this shape so that they'd be easy to differentiate from the other types of cookies.

I used no-sugar added crunchy peanut butter this time, but you can use smooth peanut butter if you prefer.
If you don't have any dark brown sugar, instead of that and the granulated sugar (a total of 100 g of sugar) use 100 g of light brown sugar. Recipe by aya#2

Ingredients

1 serving
  1. 1 stickUnsalted butter
  2. 140 gramsUnsalted peanut butter
  3. 70 gramsDark brown sugar
  4. 30 gramsGranulated sugar
  5. 1Egg
  6. 230 gramsAll-purpose flour
  7. 1 tspBaking powder
  8. 70 gramsChocolate chips (of the type of your choice)
  9. 1Granulated sugar to finish

Cooking Instructions

  1. 1

Have the butter at room temperature. Put the butter and peanut butter in a bowl, and mix together using a whisk. When they are well combined, add the dark brown sugar and granulated sugar, and mix some more.

  2. 2

Add the egg and mix in well again. Sift the all purpose flour and baking powder together and add it all at once.Fold in using a rubber spatula.

  3. 3

Add in the chocolate chips halfway though mixing in the flour, and fold in.

  4. 4

Shape the cookies. Make small balls, stretch them out a bit and squeeze in the middle. Lay out the formed cookies on a tray lined with plastic wrap. You can freeze them at this stage.

  5. 5

Put some granulated sugar in a small bowl, and roll each formed cookie in it to coat. Frozen cookies can be rolled in the sugar too - it will stick to the cookies. Place the cookies on a parchment paper lined cookie sheet.

  6. 6

Bake in a preheated 160°C to 170°C oven for about 14 minutes. Please adjust depending on how big your cookies are and how browned you want them to be.

  7. 7

They are cute if just formed into round shapes like this too. Or you could cut them out.
