Ingredients

  • 500 gmSesame seeds
  • 500 gmJaggery
  • 1/2 CupGhee
  • 1/2 CupWater
  • as neededAlmond or any dry fruits for garnish
  • 1/2 tspbaking powder

Steps

    Firstly in a pan dry roast sesame on law flame.

    Now in another pan take Jaggery add water in it. Keep stirring on medium flame till the Jaggery melting completely. Add ghee in it. Boil Jaggery syrup till it turns glossy and thickness. Check the consistency, by dropping syrup into cold water. It should from hard ball and cut with a snap sound.

    Now turn off flame and add backing powder and mix well. Add sesame seeds and stir well making sure Jaggery syrup coats well.

    Immediately pour the mixture on butter paper, or thick plastic or steel plate greased with ghee. Be quick else mixture turns hard and will be difficult to set. Now with the help of rolling pin rolled the mixture.

    Cut into the pieces. Once cool completely you can store it in air tight container.

    Now cut small pieces of Chikki and grind it in grinder. Shift these powder Chikki into cake mould or greased steel plate. Press it with the help of spoon or small bowl. Garnish with chopped almonds or any other dry fruits. Cut the pieces. Unmould pieces and store it in air tight container. This Gajak is so soft that's why it is very easy to eat for our grand parents.

    Serve them and enjoy the sweet Gajak.
