My husband doesn't like green peas, but even he loves it. This is our family recipe for green pea potage soup.

Ingredients

3 servings
  1. 150 gramsGreen peas (fresh if possible, or use frozen)
  2. 1New or sweet onion
  3. 200 mlConsommé soup stock
  4. 50 mlMilk
  5. 20 gramsButter (or margarine that can be used for cooking)
  6. 1 dashHeavy cream
  7. 2 tspSugar

Cooking Instructions

    If using fresh peas, pour boiling water over them in a colander or sieve. If using frozen, blanch them briefly and drain. This gets rid of most of the green-pea smell.

    Drop the butter in a frying pan, and sauté the green peas for about 30 seconds over medium heat. Add the sliced sweet onion and sugar, and sauté until the onion is translucent and wilted. Be careful not to let it burn. The sugar makes the peas tender.

    Add the soup to the frying pan. When it starts to bubble turn off the heat and transfer the contents to a pot. Cover with a lid, and simmer over low heat for 15 minutes.

    After 15 minutes, add the milk and stir. Puree in a blender until smooth and creamy. Pass the pureed mixture through a sieve or strainer, put back in the pot and warm it through while stirring constantly from the bottom of the pot with a rubber spatula until it's piping hot.

    Transfer to serving plates or bowls, and drizzle some cream on top. Enjoy.
