Chenna poda

Boil milk to make chenna of it. Use full cream milk. Turn off the flame.

Mix equal amount of water and lemon juice in a bowl. Add this to the milk slowly and keep stiring. The milk will curdle and stop adding lemon juice once it starts curdling.

Strain the chenna.

Now pour this chenna along with 2 tablespoon whey in a vessel. Keep mixing it. Add sooji, scrapped jaggery and sugar to this. Keep mixing using a spoon. I grinded this in a mixer grinder to make a smooth paste of it. Let it rest for 20 minutes.

Now add cashewnuts, raisins and cardamom powder to this mixture. Mix well.

Meanwhile preheat your oven on 200℃.

Grease an aluminium tray with ghee and maida. Pour the mixture in the tray.

Bake this on 200℃ for 30 to 40 minutes or till the upper layer is crispy and brown. Prick the chenna poda and check if it's baked.
