This is a favourite in our house, for quick easy week day meal. I normally follow the same steps and make in a pan on the stove but today I’m making it in the instant pot

Add oil to IP and add W cumin. Cook on sauté fir a 1 min then add in onion, and cook on sauté for 4/5 mins until onions are browned

Now onions are done and the spices and the tomatoes

Add the soaked rice & water & prawns set IP on rice setting, it defaults at 12 mins.

Open by venting as soon as it’s done to double check it’s cooked all way through. If required close lid and allow to cook in steam for ten mins as IP stays very warm. Serve on its own or accompanied with salad or as a side dish with curry

#tip IP when you put on Rice setting it will build up the pressure 1st then count down 12mins, I normally release the steam at 6 mins to check on the rice incase the rice need more water or needs longer to cook. For this recipe I left it for the further 6 mins(so full 12mins) then allowed it to rest for 5 on low. The IP reverts to low mode once the cooking time lapses
