Soak rice in warm water for 30 mins then drain it with strainer.

Start instant pot /cooker in saute mode, add oil/ghee saute for 20 sec, then add diced onion and saute for 2 mins then add vegetableas of your choice, ginger paste,and all the spices.Saute for 1 min

Add the rice,saute for 1 min Mixing the rice with the vegetables.then add water. If anything is stuck to the bottom of the pot, deglaze it. Close the lid with vent in sealing position.

When the instant cooker beeps, do a 10 minute NPR. This means let the pressure release naturally for 10 minutes, then release the pressure manually.
Veg Schezwan Pulav is ready. Enjoy with homemade yogurt or Tomato soup
