In a stand mixer with a dough hook, add the flour, olive oil, white vinegar, salt, and water.

Mix for 5 minutes. If you don't have a mixer, knead the ingredients by hand for 5 minutes.

Once the dough starts to come together and pulls away from the sides of the bowl (about 5 minutes), remove it from the bowl. The dough should be soft and elastic.

Place the dough in another bowl and cover with plastic wrap. Let it rest for 30 minutes.

For the filling: In a nonstick skillet over medium-high heat, add a little olive oil.

Roughly chop the green onions. Add them to the skillet and cook until softened.

Add the spinach, tearing it into pieces by hand, and stir. Sauté until all the liquid has evaporated. Transfer to a bowl.

Add the remaining ingredients, including the feta (crumble it by hand), along with plenty of pepper and salt. Mix well; the filling is ready.

Preheat the oven to 375°F (190°C) with convection if possible. Once the dough is ready, transfer it to your work surface and divide into 6 equal pieces.

Dust with cornstarch and roll out 6 thin sheets.

Always roll the dough by turning the rolling pin toward you. The shape of the first 4 sheets doesn't matter, but the last two will be used to close the pie, so shape them carefully.

Brush a round baking pan about 12 inches (30 cm) in diameter with olive oil.

Layer the first 2 sheets in the pan, gently scrunching them to create texture for the base.

Drizzle with olive oil, making sure not to touch the sheets with the brush so air can get between them and they don't stick together. This will make the phyllo crispier.

Form the edges of the pie, then fill any gaps with pieces of dough to add texture. Spread the filling evenly over the entire surface and drizzle with olive oil. Continue with the next 2 sheets, placing them over the filling to cover the spinach.

Pay special attention to the last two sheets. Place them on top and fold the edges inward with your hands.

Score the pie with a knife. Drizzle with the remaining olive oil; it's ready to bake.

Bake for 45-60 minutes or until golden and crisp.
