Gather ingredients

Peel and finely chop the garlic & parsley stalks
- 3
Peel & chop the onion & carrot
- 4
Chop up the chorizo & chicken
- 5
Heat some oil in a deep pan. Add all the above, plus the paprika and fry for 5 minutes

Chop up the peppers and add to the pan, stir for 5 more minutes

Add the tomato purée, crumbled stock cube & rice. Stir through.

Add 750ml boiling water, add the lid and simmer for 15 minutes, stirring regularly.

Add the peas and simmer for 5 more minutes

Chop up the parsley leaves to garnish and serve
