Mixed vegetable sandwich

Boil potatoes and mash it in the hand roughly. Finely chop onions, tomatoes, cabbage, capsicum and carrot

Crush ginger garlic and green chillies to a coarse paste

Pour oil in a pan. Put fennel seeds. Add onions and saute for five minutes. Then crushed paste and fry nicely. Add tomatoes and other vegetables

Then put all the spices, salt and turmeric powder. Cook for five minutes with the lid on. Then remove the lid and add potatoes.

Mix well and cook for five minutes. Turn off the flame and garnish with finely chopped coriander leaves

Now prepare sandwich. Pan or toaster. Anything

Toast the bread both the sides with ghee as usual. Keep the mixture on one side of the bread. Then place the other bread over and cover it. Press nicely. flip it and remove once done
