Sweet Potato and Oatmeal Koftas in Spinach Gravy

To begin making the koftas; first combine all the ingredients for the koftas in a bowl, knead well and divide them into lemon size balls.

Deep fry these koftas in hot oil until golden brown in color, take them out in a plate and keep aside

Blanch the spinach leaves and make a purée, keep aside
- 4
Grind onion, tomatoes, green chillies, ginger and cardamom to make a smooth purée.

Heat oil in a pan add bay leaves, now Stir in the onion tomato purée, cream, turmeric powder, shahi paneer masala, garam masala powder, salt, kasuri methi and chilli powder to taste.

Bring the mixture to a boil and simmer for a couple of minutes till everything get cooked through, keep stirring in between

Add the spinach purée and stir well.
Add the koftas, cover the pan and simmer until the curry and flavours get absorbed into the koftas. - 8
Adjust the consistency of the koftas by adding water if required.

Garnish with cream and Serve the delicious Sweet Potato Kofta Curry with naan, parantha or chapati
