Steps

Take boiled noodles and add cornflour in it. Give it a good mix and then deep fry them in circles until crisp. Keep aside for later use.

In a pan add 2 tbsp oil, ginger garlic chilli paste and saute for a min. Then add spring onion whites and again saute for a min.

Then add all the finely chopped veggies, salt, sugar, vinegar, black pepper and soy sauce. Saute for a min or two.

Then add water and veg stock cube. Let 2 to 3 boils come.

Add the slurry of 3 tbsp cornflour and 2 tbsp water in it and cook until soup becomes thick. Garnish with spring onion greens and green coriander.

Serve in a bowl and garnish with fried noodle circles.
