Thinly slice the sweet onions! Don't be too concerned about making the slices really thin!

Chop the garlic roughly!

Pan fry the onion slices in a frying pan. No need to add oil!

Brown the onions! Leave them be in the pan and don't move them around too much! That brings out their sweetness!

When the onions start to release a nutty aroma, flip them over!

Repeat this step several times!

The onions are browned and wilted! Add the garlic here!

Add the water, mirin, sake and miso! Don't mix at this point! Cover with a lid and let it steam-cook! The heat should be about medium!

Let it cook for 5 minutes with the lid on, then mix well to stir fry. This lets the moisture evaporate! Don't let it burn!

Taste, add some toasted sesame white sesame seeds and it's done! Adding a little pepper is good too! The sauce is sweet even without sugar.

I used them for, a recipe for making store-bought ready-to-cook gyoza dumplings into easy 'winged' dumplings.

Boom!! I added the sauce that came with the gyoza dumplings as well! It was so good!
