  • To make homemade Garganelli:
  • 2 cupsall-purpose flour (about 250 grams)
  • 2/3 cupsemolina flour (about 100 grams), plus more for dusting
  • 3eggs
  • Salt, to taste
  • 2 tablespoonsextra virgin olive oil
  • as neededWater,
  • Semolina flour, for dusting
  • For the sauce:
  • 2fresh sausages
  • For the béchamel:
  • 2 cupsmilk (500 ml)
  • Pinchsalt
  • 3 1/2 tablespoonsbutter (about 50 grams)
  • 1/3 cupsifted flour (about 50 grams)
  • Halfa nutmeg, for grating
