Here am going to share our signature dish which is bitter gourd(kareela) with mutton its our most favorite dish of winter also in summer😉 with paratha bitter gourd also known as bitter melon

Wash your hand say BismiAllah and darood shareef

Take bitter gourd wash it then peel off it then cut it from mid and discard its seeds make its piece according to your choice

Then sprinkle 2tbls salt on it and keep it a sides for almost 20m then take a bowl add 2cup water and 2tbls vinegar then mix it and dip it in water for 5m then squeeze it very well with the help of muslin cloth

Now take a pressure cooker add mutton all ingre that mentioned above with 3glass water and cook it until one whistle

After one whistle its looks like keep it on stove on medium heat

While this time you can prepare your bitter gourd take a wok add some oil and fry all bitter gourd on low medium until its colour apear light golden brown while frying add 1tbls vinegar

When bitter gourd done remove it from heat after strain it

Now check your mutton if excess water reduce

Then add oil according to your taste and bonify it slowly on medium heat while bonify add garam masala powder,ajwain, and bonify it very well for 20m or until oip separate from mutton

While bonify prepare your khara masala for dum cut onion, tomatoes, green chillies

After bonify masala add bitter gourd in mutton masala mix it and check it and set spices according to your taste

Now add onions, tomatoes, green chillies

Put it on low flame until all will be tenderize

Cook it again on high flame for 2-3m

It's done enjoy it with your favorite roti like chappati,paratha,or tandoori rooti😉😋
