A beloved treat, especially on my island, filled with beautiful memories. Since I can't be there... these are dedicated to my beautiful Corfu 😍😍

Place all the ingredients for the loukoumades in a bowl.

Mix with a whisk until you have a smooth batter.

Cover with a towel or plastic wrap and let it rise in a warm place for about 40 minutes, until it puffs up.

Heat a pot with the vegetable oil over medium heat. Do not let the oil get too hot—about 320°F (160°C) is ideal.

Fill a large glass with water and add 1 teaspoon.

Once the oil is hot, dip your hand into the dough and scoop some into your palm.

Using a teaspoon, take the portion of batter that comes out between your thumb and index finger and drop each one into the hot oil.

Dip the spoon in the water each time before scooping the batter to prevent sticking.

Fry several at a time, and when they firm up on one side, turn them over with a slotted spoon to cook the other side.

Fry until golden brown, then place them on a platter lined with plenty of paper towels to drain.

Serve with a variety of toppings.

In my family, half are served with honey and cinnamon, and the other half with chocolate syrup... so there's no arguing 😂
