Moroccan Chicken Tagine with Caramelized Onions, Raisins, and Dried Apricots 🇲🇦

To prepare the marinade, combine the spices, garlic, parsley, preserved lemon pulp, lemon juice, saffron cube, and olive oil in a bowl. Mix well.

Add the chicken pieces to the marinade and let them sit for 30 minutes. Then place the marinated chicken in a clay tagine. Slice one onion lengthwise and layer it over the chicken. Cover the tagine and cook over low heat.

After 30 minutes, add sliced onions (cut into rounds) around and on top of the chicken. Add the pre-washed raisins and pre-washed dried apricots. Sprinkle a little sugar and cinnamon over the raisins and apricots. Cover the tagine and let it cook.

Spoon some of the tagine sauce over the onions, raisins, and apricots.

Cook for 1 1/2 hours over low heat. The tagine is ready to serve. Enjoy!
