Sweet potato Parmentier with mushrooms, diced tomatoes, shredded duck, and grated Parmesan on top. A real treat for both kids and adults.

Add 2 cups (500 ml) of water to a pressure cooker. Peel, wash, and cut the sweet potatoes into pieces. Place them in the cooker and cook for 15 minutes.

Once cooked, drain the water, then add the milk and butter. Mash everything together using an immersion blender or mixer until smooth.

Season with nutmeg, salt, and pepper. Set aside.

Peel and chop the onions. Heat the olive oil in a skillet and add the onions. Meanwhile, dice the tomato and add it to the skillet.

Chop the mushrooms and add them to the mixture. Take the 3 duck legs, remove the bones and fat, shred the meat, and add it to the skillet.

Take a baking dish and spread the duck and vegetable mixture on the bottom. Add the sweet potato mash on top, then sprinkle Parmesan cheese over the entire surface to cover the mash.

Bake at 400°F (200°C) for 20-25 minutes. Serve hot.
