Sugar-Free Rice Pudding

One of my boyfriend's favorites. I was never crazy about it because the combination of milk, rice, and cinnamon didn't appeal to me, but I tried his mom's version and liked it enough to want to make it myself—especially since my boyfriend loves it so much!💕😀
P.S.: Valerio also had rice pudding tonight! And we didn't even coordinate. Haha!!!🤣

Pour the water into a saucepan and heat over low. The amount of water should be three times the amount of rice.

Add the salt.

When the water comes to a boil, add the rice. Simmer on very low heat for 12 minutes, until the rice starts to split.

Add the milk (and sugar, if using) and stir.

When it comes to a boil, dissolve the cornstarch in half a cup of cold water. Stir the mixture and pour it into the saucepan.

Simmer the rice pudding for a bit until it starts to thicken.

Divide the hot pudding into 6 tall glasses or small bowls.

Let it cool completely, then refrigerate until chilled.

Just before serving, sprinkle each portion with cinnamon.

Enjoy it cold, but I was hungry and started eating it while it was still warm.🤣

P.S.: The recipe is from Mrs. Barbarigou, but I made some changes since we had very little Carolina rice, I avoid sugar, and unfortunately we didn't have cornstarch so I just used vanilla-flavored cornstarch. We also didn't have mastic, so I left it out. As for the quantities, I thought there was too much milk and rice for 2 cups of water, so I reduced them.

P.S.2: Tips and secrets from Mrs. Barbarigou: 1. It should have a creamy texture, not be too thick. That's why when cooking the rice, always use low heat so the liquid doesn't evaporate too quickly. Keep the heat low throughout cooking.

Secret No.2: Salt enhances the flavor and brings out the aroma of mastic (if you use it).
