Chicken Tomato Simmer (Chicken Cacciatora)

A standard dish in our house.
Adding mushrooms or king oyster mushrooms is also delicious.
Step 3: Please use minced garlic (I use garlic oil). You can also make this with just onions and no carrots.
I changed the amount of water. Please adjust as you see fit. Recipe by Yuuyuu0221

Cooking Instructions
- 1
Mince the onions and carrots. Cut the chicken into 6 pieces, season with salt and pepper, then use a tea strainer to coat with cake flour.
- 2
Add the garlic oil to a thick frying pan, then cook the chicken with the skin side down. Once it's browned, turn it over and cook the other side, then remove.
- 3
Add the minced garlic and vegetables to the frying pan from Step 2 and cook. Put the meat back and add white wine.
- 4
Add the canned tomatoes, water, and soup stock to Step 3, and simmer for 30 minutes. Flavor with sugar, black pepper, and herb salt.

Chicken Cacciatore Chicken Cacciatore
Cacciatore means hunter, or hunter style in Italian. This recipe varies from providence to providence and from region to region. Some with no mushrooms or capers, and so on... Here is my version. I hope you give it a go!! skunkmonkey101 -

Chicken Cacciatore Chicken Cacciatore
A hearty and homey meal for any chilly evening. Fall off the bone chicken, a touch of heat. To soak up all the goodness I suggest to serve it with a good quality bread and sop up that sauce. Creamy polenta adds a decadent touch. Have rice soak in all the sauces goodness too. If you can find the garlic stuffed olives, grab them. In my opinion they add so much extra flavor to the dish. Chicken Cacciatore Chicken Cacciatore
Well, my version anyway. I checked many recipes on here to see what was even in it. I got that it’s a hunters dish and there’s veg in it. I used what I had on hand and I’m kind of impressed. The majority of recipes I read didn’t have cheese in it and in my brain I’m thinking Italian and no cheese? What? The hubs wanted it so I delivered. There’s no cheese in it but I’ll add some parm shavings on mine. It’s amazingly delicious. SherryRandall: The Leftover Chronicles -
