Ingredients

  1. 4chicken thighs
  2. 1onion, chopped
  3. 1/4 cupgreen capsicum, diced
  4. 1 candiced tomatoes
  5. 1 tsppaprika
  6. 1garlic cloves
  7. 1salt
  8. 1/2 tbspchopped parsley
  9. 1 tsporegano
  10. 1 tbspolive oil, extra virgin
  11. optional
  12. 2black olives

Cooking Instructions

  1. 1

    In a pan saute onion with garlic with olive oil

  2. 2

    Cut chicken into 1cm cubes and add to pan

  3. 3

    Cook until chicken looses pink on colour

  4. 4

    Add tomatoes, paprika, parsley, oregano and salt

  5. 5

    Simmer for 5 minutes stiring occasionally

  6. 6

    Chop olives and stir in cook for a futher minute

  7. 7

    Serve with rice or couscous
