Purple Sweet Potato Baked Cheesecake

I used purple sweet potato in my usual sweet potato and pumpkin cheesecake recipe because I was taking it to a party. Everyone loved it.

It's easy. All you have to do is mix and bake. Blend in order in Steps 3 and 4 for a smooth texture. If you don't have a food processor, mash the sweet potato carefully and use a hand mixer. Recipe by ehuchan

Ingredients

6 servings
  1. 200 gramsPurple sweet potato
  2. 200 gramsCream cheese
  3. 200 mlHeavy cream
  4. 2Eggs
  5. 70 gramsGranulated sugar
  6. 2 tbspCake flour
  7. 2 tspLemon juice
  8. 4packs Plain biscuits
  9. 40 gramsButter
  10. 1Powdered sugar to finish

Cooking Instructions

    Steam the sweet potato and lightly mash with a fork.

    Crush the biscuits in a food processor, and mix with butter melted in the microwave. Spread and pack in the bottom of the cake mould and chill in the fridge.

    Put the cooled sweet potato, heavy cream, eggs and granulated sugar in the food processor and blend it all together.

    Add the cream cheese softened in the microwave, the flour and lemon juice and give it a mix.

    Pour into the mould and bake for 45 minutes at 170℃.
