In a small pan heat a good amount of olive oil. Add garlic and capers and cook for about 2 mins. Meanwhile wash and roughly chop the tomatoes. Now add the tomatoes and cook the sauce down for about 6-8 mins while you cook the fish. Salt to taste

In another pan, heat some more oil. When pan is nice and hot, add fish skin side down. Leave it to crisp up. Cover with a lid and cook for about 3-4 mins until cooked through. Serve with the sauce on top and some parsley. Mop up with crusty bread
